There are a million variations of southern style collard greens and this is a veggie one. You really can't go wrong with collards.

- 1 tablespoon olive oil
- 1/2 onion chopped
- 1/2 teaspoon salt to taste
- 1/4 teaspoon red pepper flakes
- 1 cup vegetable stock
- 1 bunch collard greens chopped
- 1 pinch black pepper
- 1 pinch cayenne pepper
- 1 tablespoon apple cider vinegar
Heat large pot, add olive oil and onion and salt, sautee until soft. Add red pepper flakes and stock, bring to a boil. Add the collard greens and bring to a slow simmer. Cover and allow to cook about 10 minutes. Add a dash of black pepper, cayenne pepper, vinegar and more salt and red pepper flakes to taste.
